Pregnancy and Pancakes
I love pancakes, but never more than when I am pregnant. Seems the sweet blandness is always a welcomed meal. This morning I made up a recipe that I found on allrecipes. Since trying it almost a year ago it has become a staple recipe of my home. Healthy AND delicious! Now, I share it with you. PS. If you have a hard time finding whole wheat pastry flour, I found it at Whole Foods. Also, I have made this recipe many times with half the amount of oil and they are still delicious.
Wheat Germ Whole-Wheat Buttermilk Pancakes

Original Recipe Yield 12 pancakes
Ingredients
- 2 eggs, lightly beaten
- 1/4 cup canola oil
- 2 cups buttermilk
- 2 teaspoons baking soda
- 1/2 cup wheat germ
- 1/2 teaspoon salt
- 1 1/2 cups whole wheat pastry flour
Directions
- In a medium bowl, mix eggs with oil and buttermilk. Stir in baking soda, wheat germ, salt and flour; mix until blended.
- Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides, turning once.
